This was my dinner today; roasted potato wedges, 8 minute boiled eggs, parsley, whole grain mustard, lemon juice and olive oil. Really tasty and pretty good nutritionally too. Here in the US, a traditional breakfast is potatoes and eggs, in a multitude of forms and variations.
Other kinds of eggs work just as well with potatoes as the traditional chicken eggs do. Fish eggs (caviar) are fantastic on steamed red skin potatoes with a little sour cream. Duck or quail eggs are kind of fancy, I don’t often have them at home.
